This junmai daiginjo sake was matured in our Yukimuro, an insulated room filled with a vast amount of snow. Our snowy region of Uonuma, Japan, has been using this method of storing food at low temperatures for centuries, using natural snow. From the cold of the snow alone, the temperature is naturally kept stable at 3 degrees Celsius without electricity. Three years later, the sake is perfectly round and smooth.

Hakkaisan Sake Brewery is located in Minami-Uonuma, an area known for producing high-quality Koshihikari rice. The sake is named after the sacred peak of Hakkaisan in the snowy Echigo Sanzan range. Having its roots in the Hakkaisan river system and the surrounding natural environment, it is a product of its clear water. Brewing season typically finds the town draped in snow.
