Senkin Sake Brewery
Senkin Sake Brewery, founded in 1806 and located in Sakura City, Tochigi Prefecture, is one of Japan’s oldest sake producers. The brewery is currently led by the Usui brothers, Kazuki and Masato, who have revitalized its image with a focus on acidity and terroir-driven sake. The 11th-generation CEO, Kazuki Usui, previously worked as a wine sommelier, which deeply influenced his approach to crafting sake that emphasizes a balance of acidity and fruitiness, often compared to wines like German Riesling .
Senkin is renowned for its innovative and artisanal sake-making techniques, including the use of natural yeasts, wooden barrels, and the kimoto method, which relies on natural lactic acid fermentation. The brewery has embraced modern sustainability practices, cultivating its own rice locally and creating small-batch, high-quality sake categorized into three series: Modern, Classic, and Nature, each offering distinct flavor profiles.
Senkin’s transformation under the Usui brothers has made it a trailblazer in Japan’s sake industry, known for blending traditional craftsmanship with contemporary flavors to suit modern palates .
