A luxurious plum liqueur brewed using aged sake (koshu). The plums used are Benisashi from Fukui Prefecture, known for their light red surface when ripe, as well as their fragrant taste and juicy flesh. We were founded in 1866. We have a warehouse next to the Nagara River, a great source of water. As part of our strategy to differentiate ourselves from other sake breweries, we started developing aged sake products in the 1960s, centred around our aged sake "Daruma Masamune." "Daruma Masamune" boasts a unique lineup of aged sakes that are difficult to produce, such as 5 years, 10 years, and 20 years. Its spicy and complex taste makes it popular not just in Japan, but also overseas.

It is easy to identify aged sake or Koshu by its colour and aroma. Think of a delicate peaty Scotch whiskey. Given how delicate sake is, you wouldn't expect it to last this long. Yet it is, and it does. Shiraki has tanks since 1979, a portion of which goes into each sake. But like a chef's most treasured spice, only a touch is used in these young blends. These older sakes shine in older blends.
