This junmai daiginjo sake was matured in our Yukimuro, an insulated room filled with a vast amount of snow. Our snowy region of Uonuma, Japan, has been using this method of storing food at low temperatures for centuries, using natural snow. From the cold of the snow alone, the temperature is naturally kept stable at 3 degrees Celsius without electricity. Three years later, the sake is perfectly round and smooth.
